Shrimp Orzo

Cooks in 30 Minutes Difficulty Easy

This is such an easy weeknight meal, and it feels fancy, like something you would order at a restaurant! Feel free to add or substitute different veggies!

Ingredients

  • 1/2 lb shrimp, frozen or fresh, if frozen, defrosted

  • 1 cup orzo

  • 1 tbsp olive oil

  • 1/4 onion, chopped

  • 4 oz mushrooms, any variety

  • 1 tbsp garlic

  • 1/4 cup sun dried tomato + 1 tbsp oil from jar

  • juice from 1/2 a lemon

  • 2 handfuls fresh spinach

  • salt and pepper

  • 1/4 cup parmesan cheese, fresh shredded is best

Directions

  • Bring a pot of salted water to boil. Cook orzo according to package directions. Drain and set aside until ready to add to rest of the dish.
  • Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add mushrooms and sauté a couple more minutes. Add garlic and sun dried tomatoes, as well as oil from sun dried tomato jar. Mix together and sauté for a couple more minutes, until garlic is fragrant.
  • Add shrimp to mushroom mixture and season with salt and pepper. Squeeze in lemon juice. Sauté shrimp for a couple of minutes until they start to turn pink. Add handfuls of spinach and mix in/sauté until spinach begins to wilt, but is not fully wilted.
  • Add cooked orzo to skillet and mix in. You may want to drizzle with a tiny bit more olive oil if mixture seems dry.
  • Sprinkle in a 1/4 of a cup of parmesan cheese and mix. Serve in bowls topped with another sprinkle of parmesan cheese.
  • Enjoy!

Tips:

  • I LOVE using infused olive oils. A garlic infused olive oil is perfect for this recipe.
  • You can use whatever mushrooms and veggies you want here! I used cremini mushrooms and spinach, but you could use kale or any type of mushrooms.
  • You will want to taste this one a couple times as you go, especially towards the end when you add the orzo, you will probably want/need to add a bit more salt!
  • I love using fresh parmesan either off the block of freshly grated/shredded from my grocery store. The bottle kind is great for other things, but the fresh parmesan really makes a difference here!

Cook orzo according to package directions
Sauté onions, then add mushrooms
Add sundried tomatoes and garlic
Add shrimp
Add spinach
Add orzo to skillet
Mix and sprinkle with parmesan cheese!
