This is such an easy weeknight meal, and it feels fancy, like something you would order at a restaurant! Feel free to add or substitute different veggies!

Ingredients
1/2 lb shrimp, frozen or fresh, if frozen, defrosted
1 cup orzo
1 tbsp olive oil
1/4 onion, chopped
4 oz mushrooms, any variety
1 tbsp garlic
1/4 cup sun dried tomato + 1 tbsp oil from jar
juice from 1/2 a lemon
2 handfuls fresh spinach
salt and pepper
1/4 cup parmesan cheese, fresh shredded is best
Directions
- Bring a pot of salted water to boil. Cook orzo according to package directions. Drain and set aside until ready to add to rest of the dish.
- Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add mushrooms and sauté a couple more minutes. Add garlic and sun dried tomatoes, as well as oil from sun dried tomato jar. Mix together and sauté for a couple more minutes, until garlic is fragrant.
- Add shrimp to mushroom mixture and season with salt and pepper. Squeeze in lemon juice. Sauté shrimp for a couple of minutes until they start to turn pink. Add handfuls of spinach and mix in/sauté until spinach begins to wilt, but is not fully wilted.
- Add cooked orzo to skillet and mix in. You may want to drizzle with a tiny bit more olive oil if mixture seems dry.
- Sprinkle in a 1/4 of a cup of parmesan cheese and mix. Serve in bowls topped with another sprinkle of parmesan cheese.
- Enjoy!
Tips:
- I LOVE using infused olive oils. A garlic infused olive oil is perfect for this recipe.
- You can use whatever mushrooms and veggies you want here! I used cremini mushrooms and spinach, but you could use kale or any type of mushrooms.
- You will want to taste this one a couple times as you go, especially towards the end when you add the orzo, you will probably want/need to add a bit more salt!
- I love using fresh parmesan either off the block of freshly grated/shredded from my grocery store. The bottle kind is great for other things, but the fresh parmesan really makes a difference here!
