Shrimp Tacos with Homemade Guacamole

This is my go-to taco recipe for Taco Tuesday! It is so quick, so easy, and so tasty. It is also very versatile; you can change up the guacamole or add more toppings depending on what you have on hand or what you are craving. We never get sick of this recipe and has become a staple for our taco nights!

Ingredients for the Guacamole

  • 2 avocados, halved and pitted

  • 1/2 red onion, finely diced

  • 1 jalapeño, finely diced, seeds and ribs removed for less spice

  • 1 tbsp minced garlic

  • juice from 1 lime

  • salt and pepper

  • 1/2 tbsp olive oil

Ingredients for tacos

  • 1 lb frozen or fresh shrimp, if frozen, defrost, shells and tails removed, cleaned

  • 1 tbsp olive oil

  • Mexican seasoning or other like seasoning

  • 8 tortillas, fajita size

  • sour cream

  • cojita cheese

Directions

  • If shrimp are frozen, defrost while making the guacamole. Place shrimp in a strainer in the sink and run cool water over until defrosted.
  • For the guacamole, scoop out the avocado from the shell halves and add to bowl. Add all other ingredients and mix well, making sure to smash the avocado as you go. Taste for salt and pepper. Set aside.
  • Heat olive oil in skillet over medium heat. Place shrimp in skillet and season with Mexican seasoning. Cook for about 4 minutes and flip over. Cook on other side for about 2 minutes until pink. Turn off heat.
  • While shrimp are cooking place 2 tortillas on each plate. Spread a spoonful of sour cream on the bottom of each tortilla. Once shrimp are done, top each tortilla with 3 shrimp. Then top with a spoonful (or two!) of guacamole. Crumble cojita cheese and sprinkle that on top.
  • Enjoy!

Tips:

  • If you prefer your guacamole extra spicy, keep the seeds and ribs in from the jalapeño. Or for medium spice, keep ribs and seeds from half the jalapeño!
  • I know olive oil is not a traditional ingredient in guacamole, but I find it adds even more creaminess to it and brings it all together.
  • Feel free to also add chopped tomato or cilantro to your guacamole! I despise cilantro so you will never see it in any of my dishes! 😊
  • I love lightly toasting my tortillas before adding the ingredients. It adds a crunch and also makes them easier to stay in actual taco form!
