This is another really easy weeknight meal that you can adjust based on what you like! Feel free to swap out the mozzarella for feta, or use real spaghetti instead of zoodles.

Ingredients
1 lb ground turkey
1/2 lb ground turkey sausage
1 tbsp garlic, minced
1 egg
1/2 cup shredded mozzarella
1/4 cup grated parmesan
1/4 cup breadcrumbs
1 scallion, chopped
2 handfuls spinach, roughly chopped
1 tbsp dried oregano
1 tbsp dried parsley
1 tsp salt
1/4 tsp pepper
4 large zucchinis
1 tbsp olive oil
1 tbsp garlic, minced
1 tbsp butter
salt and pepper to taste
parmesan cheese for topping (optional)
Directions
- Heat oven to 400 degrees.
- Mix together first 13 ingredients. Form into equal size balls (you should get 14-16 depending on the size you would like). You can also use an ice cream scoop to make sure they are equal sizes.
- Place balls on a baking sheet lined with parchment paper or wax paper. Bake in oven for about 20 minutes until internal temp reaches 160 degrees. About halfway through baking process, flip meatballs over so they other side can brown.
- Spiralize zucchini using spiralizer. Heat olive oil in skillet over medium heat. Add spiralized zucchini (zoodles) and sauté until cooked down and softened. You can cook them down to whatever texture you like, you might like a little more crunch and have the zoodles be a little more raw, or want them to be softer. I prefer mine to be softer – up to you!
- Once zoodles have cooked down add garlic, butter and salt and pepper to taste. Mix together. This creates a sauce for the zoodles.
- Once meatballs are done, add to the zucchini and mix together to coat. Serve in bowls with a bit of the zucchini and 3 meatballs per servings. Top with shredded parmesan cheese.

Tips:
- 4 zucchinis sound like a lot, but they cook down quite a bit! When I make this for my husband and I, I use 2 zucchinis and there are never any zoodle leftovers!
- You could also swap out chicken sausage or ground chicken for turkey if you can’t find one or prefer one to the other. My grocery store actually doesn’t carry turkey sausage all of the time, so you will see chicken sausage in the picture below.
