Baked salmon is such an easy and nutritious weeknight meal! At one point I was making this once a week because it was so easy! And just like most of my recipes you can change this depending on what you like or have on hand. You can leave out the bacon, or swap in turkey bacon, or change out the herbs on the salmon!

Ingredients
2 salmon fillets
salt and pepper
lemon juice from half a lemon
1 tbsp dried parsley
1 tbsp garlic, minced
1/4 cup parmesan cheese, grated
1 cup couscous, uncooked
salt and pepper to taste
2-3 strips of bacon, cooked and cut into bite-size chunks
1/2 cup of peas, frozen
1 tsp olive oil (optional, if couscous seems dry)
Directions
- Heat oven to 400 degrees.
- Pat salmon dry with paper towel (do this especially if using frozen salmon). Season salmon with salt and pepper. Mix in a bowl: lemon juice, parmesan cheese, parsley, and garlic. Spread parmesan cheese mixture equally between two salmon fillets, pressing down slightly to get it to stick to the salmon. Bake in the oven for 12-15 minutes until salmon is fork tender and flaky.
- While salmon is cooking, cook couscous according to package directions, but add in about 1/4-1/2 cup more water than called for. In the last few minutes of cooking, add peas to cook with couscous. When finished cooking, add bacon and season with salt and pepper. Taste. If couscous seems to dry, add a tsp of olive oil.
- To plate, add a big spoonful of couscous to plate, and top with salmon.
