This recipe is so easy and so fresh! If you like bruschetta crostini, you will love it on chicken! I served these with a side of lemon basil potatoes which can be found here! Fresh basil really makes a difference here, but you could always use dried if you don’t have fresh.

Ingredients
4 chicken breasts
1/2 tsp salt and pepper
1 tbsp olive oil
2 tbsp Italian seasoning
3 Roma tomatoes, chopped
2 tbsp garlic, minced
1/2 red onion, chopped
3 tbsp fresh basil, chiffonade
salt and pepper to taste
1 tbsp olive oil
1/4 cup shaved parmesan cheese
balsamic glaze (store bought or homemade)
Directions
- Heat oven to 400 degrees.
- Heat olive oil in skillet over medium heat. Season chicken with salt and pepper and Italian seasoning. Add chicken to skillet and sear on each side for about 5-7 minutes, until browned. Finish cooking chicken in the oven until internal temp reaches 160 degrees. Take out of oven and set aside until chicken is up to temp at 165 degrees. (If chicken is already up to temp at this point, set chicken aside on a plate covered with foil until ready to plate. It depends on the thickness of your chicken breast. If the chicken is thicker it will need more time in the oven, if it is thinner, then is might be all set cooking in the skillet.)
- Meanwhile, mix together the tomatoes, onion, basil, garlic, salt and pepper, and olive oil. Taste to see if mixture needs more salt and pepper.
- Once chicken is done cooking, plate chicken and top with tomato mixture. Then top with shaved parmesan cheese and drizzle with balsamic glaze.
