Lemon Basil Potatoes

Lemon is one of my favorite flavors and these potatoes are the perfect side to dish to so many meals! Fresh basil is really key here, but you could always use dried if you don’t have fresh.

Ingredients

  • 1.5 pound bag of fingerling or creamer potatoes

  • 2 tsp salt

  • 2 tbsp fresh basil, chiffonade

  • 2 tbsp butter

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • salt and pepper to taste

Directions

  • Cut potatoes in half. Add potatoes to pot filled with water and salt. Bring pot of water to a boil.
  • Boil potatoes until fork tender, about 20 minutes.
  • Drain potatoes. Add basil, butter, lemon juice, lemon zest, and salt and pepper to taste. Mix together until butter is melted.
  • Enjoy!
